Waldorf Salad

1 cup celery, washed & diced
½ cup walnuts, chopped
4 cups of apples, chopped
¾ cup low-fat vanilla yogurt
1½ teaspoons lemon juice

Other Options
½ cup strawberries, chopped
½ cup grapes, chopped

Directions
1. Combine celery, apples and walnuts in a mixing bowl.
2. In another bowl combine yogurt with lemon juice to make a dressing.
3. Add the celery to the yogurt mixture.
4. Refrigerate until ready to serve.

Carrot Raisin Salad

2 cups carrots, shredded
½ cup raisins
½ cup low-fat vanilla yogurt
1 teaspoon lemon juice

Optional
½ cup pineapple, chopped
¼ cup walnuts, chopped

Directions
1. Clean and shred carrots.
2. In a large bowl, combine carrots with raisins.
3. Mix together yogurt and lemon juice.
4. Pour yogurt mixture over salad and mix well. Enjoy.
